What's Cookin' for the NFC Championship...
The football Gods are smiling, the hell with what ESPN and NFL Network would have you think, oh look at how nice the Jets are talking about the Steelers, makes me want to puke. Calling the NFC Championship Game an appetizer for the main entree of the AFC Championship, as they continue their stroking of the Packers, Aaron Rodgers, the Jets, Sanchez, the Steelers, Big Ben, and the continued disrespect of the Bears and Jay Cutler, " he had a nice game, but..." he almost threw an interception, he leads the league in " almost interceptions ". The game of the weekend is going to be the Bears vs Packers, the NFLs longest rivalry playing in the post season for only the second time ever, for a chance to go to Dallas for the Super Bowl, this game is huge. Okay I got off on a rant there, sorry. We are having an NFC Championship Party, as I'm sure a lot of you are as well, and on that menu is all about Chicago, we're gonna have Chicago Italian Beefs, Chicago Style Hot Dogs, Jays Potato Chips, as well as whatever other dishes our guest bring to pass, and of course lots of ice cold beverages to celebrate the Bears victory.

Probably the only thing I agree with on this site.
That would be good food. I think I’ll do something simple I’ll be to intense Saturday and Sunday to prepare something with a lot of prep time. Right now I’m thinking beer can chicken, Grilled portabellas maybe stuffed with crab, blue cheese, walnuts and lots of appetizers. Although a bunch of cooking could make the time go by quicker.

It will be hard to knock out the tailgate from last week
Ribs, steak sandwiches, shrimp, bloody marys and plenty of snacks..I have to come up with something good.

When you go to somebody's house, you don't crap on their floor. Being a fan of one team does NOT give you license to be a dick to fans of another.
Corollary: When people are visiting your house and behaving themselves, them being a fan of a different team is NOT a reason for you to piss in their beer.

a gigantic sub sandwich
and lots of ice cold beer with tequila shooters

We'll start the morning off (probably 8am-ish)
with some Bloody Marys, while cooking some homemade cheese dip in the slow cooker. Not sure yet which recipe we’ll go with, but it will be made with Goose Island’s Pepe Nero, because it will take a Chicago product to make the cheese good.
After that, it’s traditional football food… buffalo chicken strips, cocktail weenies, guacamole, etc.
I hope to watch the second game as well, but something tells me I won’t make it too far beyond the end of the first game.
And I know why
… cause you’ll be celebrating a good old Chicago beat down of the Packers

Tooie's cheese dip
’1 lb velveeta, coarsely chopped
’1 12oz can evaporated milk
’1 jar pimento-stuffed olives, drained and chopped
’1/2 cup chopped pecans
’1 onion, finely chopped (qty is a matter of taste; try 1/2 to 3/4 cup to start, and add more if you like more onion)
’1 cup mayonnaise
’1 dash Worcestershire sauce (about 1/2 tsp)
’1 dash red pepper (1/4 to 1/2 tsp)
- A 1-1/2 qt corningware is perfect for this, because you can prepare and serve it in the same dish.
- Melt the coarsely chopped velveeta in the evaporated milk in the microwave. (Set it for 2 minutes at a time, thoroughly whisking in between until it’s done. Takes my microwave 4 min total.)
- Stir in other ingredients. Chill. Great with Wheat Thins, Triscuits, or Ritz.
